Giovanni Conterno produces his Monfortino Riserva Speciale only in the finest vintages and in small quantities. In older vintages, extra intensity was produced by submerging the cap and allowing the temperature of the must to rise to 36-37 degrees C. during fermentation which extended to thirty-five days. The 1971 is one of the greatest "old style" Barolos ever produced.
