Les lames en acier sont estampillé 'GAVET' sous un E couronné pour François Charles GAVET (1753-1840) le fils de Jean Gavet, coutelier du Roi. Il succède son père et obtient, à son tours, le titre de coutelier du Roi en 1782 ainsi qu'une mention honorable en 1806 à l’Exposition des Produits de l’Industrie. Il tient un magasin et une fabrique au 138 rue St Honoré qui seront repris par son fils Charles Gavet.
