Tasting note: The 2000 Brut Cuvée Elisabeth Salmon is refined and elegant, with lovely depth and richness in its fragrant fruit. The 2000 Elisabeth Salmon is weightier than the NV Brut Rosé yet everything is simply in the right place. This is a gorgeous, wonderfully expressive Champagne from Billecart-Salmon that is even more impressive than it was last year. The 2000 Cuvée Elisabeth Salmon is 50 Chardonnay and 50 Pinot Noir, of which 10 is still Pinot juice. Roughly 10 of the wine was aged in cask, and the wine was bottled with 9 grams of dosage. 93 points. Antonio Galloni, eRobertParker.com #186, December 2009
