FINE TOKAY
"The least known of all the great classic European wine districts,
Tokay is a tiny region in eastern Hungary, close to the
Soviet-Ukraine border. The finest dessert wines have an almost
indefinite life and, even when opened, will be drinkable for months.
The older, more concentrated wines can have a very heavy and obstinate sediment, so store upright.
Apart from the very old straight-sided dumpy types, all Tokay bottles
are very distinctive traditional slender-necked half-litre bottles,
in use from the early 19th century to the present day. Almost
invariably, mean little corks are used, but they seem to serve their
purpose. Unless otherwise stated all the wines will have been made
from the traditional Furmint grape.
There are various grades of Tokay or Tokaji made: Szamorodni
('as it was grown') can be dry or sweet. The most distinctive
wines are Aszú, those which have had, in effect, concentrated
grape juice paste added in measures called puttonyos (putts),
three putts being medium-sweet, four sweet, five Sauternes-like,
six, now fairly rare, sweeter still. Aszú-Eszencia is like
fairly concentrated Beerenauslese, and the extremely rare
'Essence' (Esszencia, Eszencia or Essencia) is intensely
rich, TBA-like." JMB
